The red fruit aromas come from the pinot noir, blended with a reserve wine of blended pinot noir, chardonnay and meunier, spanning 25 vintages. This has slightly higher dosage than the other wines at 9g/litre which lends a little to the weight that played so well with the dessert.

Champagne Bollinger Special Cuvee served with lemon sorbet

The citrus of sorbet found a great reply in the brioche and rich creamy character of the Bollinger. In fact there was a great tension between the two which played very well. A great choice by Carl Edmund that no doubt remained in many peoples minds!

Carl Edmund: “So we wrapped up with Churchill’s absolute paramount favourite dessert, ice cream and, more specifically, lemon sorbet in a cone. With this we had with Bollinger Special Cuvée. The reason we had this phenomenal iconic brand ambassador champagne, was because of the beautiful, illustrious citrus notes, paired with almond and toasted bread. These are notes that further developed into other characteristics as well. 

So, these citrus, almond and toasty notes, from Bollinger Special Cuvée, were perfectly paired with the lemon sorbet and cone.”

Last week a picture was posted on Twitter of vines in Shabo, a large estate that lies to the west of Odesa on southern Ukraine’s Black Sea coastline. The image seemed benign at face value but the reality, of course, is that the city of Odesa has been bracing itself for attack by Russian forces. 

 

As COVID-19 conspires with the grimmest of winds and rain to force a societal retreat behind our own front doors, the word ennui springs to mind. The muddle of displeasure is pierced when Natalia hands me a large bulbous glass of a liquid I do not recognise.

 

 

Britain’s lamentable exit

On the eve of Britain’s official departure from the EU, my partner and I decided to explore a small town on the Italian Riviera where thewintry cold doesn’t feel so much like cold war bite.

Sitting inside the ancient castle walls inside the town of Soave, a short drive from Verona in northern Italy, the unique slightly almond aroma of the indigenous grape, Garganega, rises gently from my glass. The castle sprawls up the side of an extinct volcano that gives the region its variant soil structures that mark out the better quality of Soave wines.
